Song Dynasty Tea Ceremony 宋代茶艺

Dian Cha 点茶 is an ancient tea art from more than 1000 years ago in Song Dynasty.  The method of preparation is called Qi Tang Dian Cha Fa 七汤点茶法 and involves adding water and whisking the tea seven times. This ancient tea making technique is the origin of the Japanese tea ceremony nowadays as we know. Unfortunately, Song tea making is a lost art form that people have stopped practicing it since the Yuan Dynasty took over China. We have learnt today are based on the past books, poems and other form of literatures, which only give us a glimpse of the beauty of the tea art.

In this tea class we will be sharing some history and culture of this art form, and demonstrate some techniques to prepare the tea.

Water for Dian Cha

Spring water, boiling till the bubbles are the size of fish eyes (90-95°C)

Tea for Dian Cha

A compressed tea cake (spring-harvested tea leaf, picked one bud and two younger leaves, then steamed, washed, steamed again, compressed into a mould and baked dry)

Steps to prepare Dian Cha

  1. Roast the tea cake
  2. Crush the tea cake
  3. Grind the tea into powder
  4. Prepare water
  5. Sift tea powder
  6. Place tea powder into container
  7. Warm up tea bowl
  8. Add 2-3 spoons of tea powder into the bowl
  9. Pour water into the tea bowl and whisk seven times
  10. Achieve Xue Mo Ru Hua 雪沫乳花 (a frothy cream texture like fluffy snow)
  11. Create pictures/calligraphy on top of the tea (the first ‘latte’ art)
  12. Fen Cha (share the tea into several bowls)

    TEA PRODUCTS (Consumables) Due to the nature of food and beverage products, all opened tea purchases are final sale. This is standard across the industry — for hygiene and quality reasons, tea and other consumable products are not eligible for return or exchange once they have been opened or used. For unopened tea, we accept returns under the following conditions: - Item is returned within 30 days of delivery - Packaging is intact and sealed in its original condition - You contact us before sending anything back (hello@mscattea.com.au) 


    We will always accept returns for unopened items still in the original undamaged packaging within 30 days of purchase. Tea Return shipping costs are the responsibility of the customer unless the return is due to our error. 


    TEAWARE & ACCESSORIES Non-consumable items (teapots, cups, infusers, etc.) may be returned or exchanged if: Returned within 30 days of delivery Item is unused, unwashed, and in its original condition Original packaging is included If a teaware item does not meet your expectations, we will gladly accept a return for store credit or offer a replacement if returned within 30 days of delivery. 


    DAMAGED, DEFECTIVE OR INCORRECT ORDERS If your order arrives damaged, defective, or incorrect: Please contact us within 48 hours of delivery with photos so we can assess and resolve the issue. Once verified, we will offer a replacement, store credit, or refund depending on the situation and stock availability. Return shipping will be covered by us in these cases.
